The topic for day number 4 of BEDN is ‘Food Glorious Food’, and that’s something I’m pretty good at, considering I eat a lot of food. So I thought I’d bring you the recipe I mentioned yesterday: jammy rock cakes! We were just sat watching TV in the afternoon yesterday (/today – I’m scheduling this!) and Ben asked if I’d ever heard of rock cakes. Well, of course I had, but I’d never made them. He’d been thinking about how his aunty Cath had used to them for him with a little blob of jam on top when he was younger and how he wanted some again. So we looked up a recipe, realised they were super easy and that we had all the ingredients, so decided to make some. They literally took about 5 minutes to make and 15 to bake. Basically they’re just a quick version of ready made scones! So here’s the recipe.
Jammy Rock Cakes
This is a very easy introduction to baking that's difficult to make a mess of! These jammy rock cakes are inspired by Ben's Aunty Cath - a proper old-fashioned and traditional British recipe.
Ingredients
- 200 g self raising flour
- 75 g caster sugar
- 50 g margarine
- 1/2 tsp vanilla extract
- 1 large egg
- 1 tbsp milk
- Jam (of your choice!)
Instructions
- Preheat the oven to 180C (360F).
- Beat together the margarine, sugar and vanilla extract until creamy consistency.
- Mix in the flour and the egg until the mixture comes together. Use the milk to bring it together a bit easier.
- Split the mixture into 12 balls and place spread out on a greased baking tray.
- Press your thumb into the top of each ball and fill the indent with a small amount of jam.
- Bake in the preheated oven for around 15-17 minutes until browned. Leave to cool, then enjoy!
